Wishbone Cabernet Shiraz is produced by the forward-thinking team at Smalltown Vineyards, located amongst the rolling hills and rugged landscapes of South Australia. Established in 2008 with the goal of bringing high quality, small-production wines to market at an affordable price point, Smalltown Vineyards sources fruit from a network of meticulously managed vineyards across Australia’s premier wine regions.

By partnering with dedicated growers and leveraging close relationships with winemakers, Smalltown is able to cherry-pick the finest parcels of fruit to create their range of expressive, over-delivering wines. Their Wishbone Cabernet Shiraz blend combines two quintessential Aussie varietals into an intriguing, complex and immensely drinkable red wine that celebrates the diversity of Australian terroir.

Viticulture and Vinification

Wishbone Cabernet Shiraz sources its Shiraz from very old, dry-farmed vines rooted in the ancient sandy alluvial soils of riverland sites in South Australia. This special plots yield intensely flavoured Shiraz full of ripe cherry and blackberry notes. The Cabernet Sauvignon is harvested from low-yielding vineyards in the Barossa Valley, where the rugged terroir adds structure and blackcurrant lift.

The grapes are harvested by hand and transported to the winery where each parcel is fermented separately. A portion of the wine completes fermentation and maturation in seasoned and new French oak barrels for added complexity, while the remaining portion is aged in stainless steel to preserve the fresh fruit. After 10 months the parcels are blended, then bottled unfined and unfiltered to retain maximum flavour and character.
