The chase family has a passion for farming, they grow potatoes and apples which they distil into their range of spirits. Their farm is based in Herefordshire, a county that boasts some of the richest farmland in the world. It is here they grow King Edward, Lady Claire and Lady Rosetta potatoes.
Having the distillery located on the farm allows them to keep a watchful eye over how their potatoes and apples move from field to bottle.
Unlike most distilleries, they make our gin from scratch rather than buying in a readymade neutral grain spirit. People care about the terroir of their wines or the barrel aging of their whiskies, so why shouldn’t they care about the traceability of their white spirits?
In their bespoke copper gin still, Ginny, botanicals are added both into the belly of our still and vapour infused through their carter head chamber giving different complexities to their gin. Most distilleries are trying to use botanicals to mask the base spirit in their gin, whereas they use their botanicals to draw out the best aspects and their botanicals compliment the mineral earthiness found in their spirit.
