New London Light Aegean Sky from Salcombe Distillery was carefully distilled and crafted using six core botanical distillates and extracts, as well as six natural flavours, all handpicked to highlight the vibrant Mediterranean coastlines of the Aegean Sea and to create a flavour profile reminiscent of the region’s finest citrus and olive groves.

To make the base for New London Light Aegean Sky, the master distillers first perform a ‘botanical steep.’ Six hand-selected and carefully balanced botanicals, including kumquat, bergamot, olive, and rosemary, are steeped in a neutral grain spirit and water for 48 hours at approximately 40% ABV. The use of alcohol to extract and transport flavour is a critical step in the process.

The ‘botanical steep’ is then distilled in a rotary vacuum still, a process that removes the alcohol without removing the flavour. This results in a highly concentrated core flavour distillate that serves as the foundation for New London Light Aegean Sky. This core flavour distillate is then carefully blended with a further 6 natural flavours, including blood orange and rosehip, then stabilised with the unusual use of kombucha.

Tasting Note

On the nose, there are bright citrus aromas of blood orange, mandarin, and kumquat.

Fresh, bitter citrus flavours dominate the palate, which is layered with floral notes of rosehip and bergamot citrus, earthy herbal undertones of rosemary, and complex layers of olive throughout.

The finish is bitter and dry, with woody notes from the quassia balanced by herbaceous rosemary. A lingering citrus, and a slightly savoury undertone of olive shines through until the end.

INGREDIENTS

  • 50ml New London Light Aegean Sky.
  • 150ml Premium light tonic water.
  • Rosemary sprig.
  • Black Olive.

METHOD

  • Fill a highball glass with ice.
  • Add one large measure of New London Light Aegean Sky.
  • Add 150ml of premium light tonic water.
  • Garnish with a sprig of rosemary and a black olive.
